Lousy Weekend

In a way, it was a great weekend. I was the meet referee for a USA Swimming long course meet here in Corpus. The meet went well and I learned a few new things about running one. But the bad news is that I ate a bunch of junk in the hospitality room–blueberry muffins, tacos, sandwiches, etc. Way too many carbs. So once again I pretty much waste a week of good work with a lousy two days. But it is what it is and I just have to climb back on the wagon and get going again. I have a racquetball match with Neal scheduled for tomorrow.
A Little Catch Up

My website/blog server was inaccessible Friday afternoon so I was unable to post. I just wanted to do a quick update. Friday afternoon I did a quick workout in the front yard. I did kettlebell clean and press ladders, and some swings. Saturday I went to the gym (while my wife was a few hundred yard away grocery shopping) and did pullups on the Gravitron, and some pushups. Saturday I also walked for an hour around the hood.
Today was a do nuthin day—a lot of time in front of the tube watching golf. But I did manage to cook a rather primal meal. I made a stew from javelina meat. I came out quite well.
After a long layoff due to the foot problems, I’m back on the bike for the commute tomorrow.
Coconut Milk Ice Cream Revisited

This is a follow-up to yesterday’s post on making some faux ice cream. After nearly two hours in the freezer, my batch had only started freezing around the sides. So I put four or five tablespoons in a small paper cup and put that back in. About 20 minutes later I tried it and it was great. There was a very thin crust but the rest was like soft ice cream, and the taste was delicious. I left the rest in the freezer overnight and this morning it was rock hard. I moved it to the refrigerator—I’ll see what I have when I get home. So the trick in making this stuff is getting the consistency right. It will take some experimentation to see how much to put in the freezer for how long to get it right. If more than one person is going to be eating it, it’s probably a good idea to pour it into several paper cups rather than waiting on a big batch to freeze. At any rate, the possibilities for a great tasting, low carb (high fat) snack are there. The devil is in the details.
Coconut Milk Ice Cream vs. Blue Bell Chocolate Chip Cookie Dough

Today I saw a Tweet on Twitter (that has a ring to it
) on how to make an ice cream substitute using coconut milk. It’s pretty simple—add fruit to coconut milk plus optional vanilla extract, and throw it in the freezer for an hour. I put a batch in about 30 minutes ago so I’m anxious to see how it’s going to turn out. In the meantime, I wondered how it compared nutritionally to the real thing. I’m in a weight/fat loss mode right now so I still have to watch total intake regardless of how primal friendly the food I’m eating is. So here’s how they break down:
Blue Bell Ice Cream
- Total Volume 400 mL
- Total Calories 764
- Total Fat 36g
- Saturated Fat 25g
- Trans Fat 4g
- Total Carbs 96g
- Sugars 68g
- Protein 12g
Coconut Milk Ice Cream (with 8oz of canned pineapple)
- Total Volume 627 mL (400 Milk/227 Pineapple)
- Total Calories 900
- Total Fat 94g
- Saturated Fat 72g
- Trans Fat 0g
- Total Carbs 34g
- Sugars 26g
- Protein 0g
When I have more time, I’ll put this in a table to make it easier to compare; however, it’s pretty damn obvious which is the best to go for someone trying to restrict carb intake. And virtually all of the carbs in the coconut ice cream came from the pineapple. You could pick other fruit that is more primal friendly (like blueberries). And I can’t go crazy eating the stuff either–just a small sample for a treat.
I’ll post again later to compare the taste. I already know the Blue Bell ice cream is delicious (ahh, ahh, how do I know that?..oh yeah, my grandkids told me!

Zero Temptation To A Juicy Ribeye

I had to officiate a swim meet this morning and I was concerned that the hospitality room might only have junk like donuts and the like to eat. I was wrong. There was NO hospitality set up at all! I guess since this was a junior high meet only scheduled to last two to two and a half hours, they decided it wasn’t needed. So I ended up with a bit of a fast going until I took my granddaughter to Chili’s after the meet. I got the 12-ounce ribeye with some veggies on the side. A very primal way to break the fast.
I was very pleased with my last couple of weigh-ins. I’m finally making some progress. I’ll probably get a bump on the scale while that big chunk of beef digests, but I’m definitely moving in the right direction.

Fitday Numbers

Here’s my numbers for today—a little more than I was planning to eat. The thing that tipped the numbers a little was finding a batch of my wife’s guacamole when I got home. I absolutly love the stuff. It great, healthy stuff—just calorie dense. I almost skipped the small round steak I had put out to cook, but I decided to eat it since I had prepped it for the broiler. I think I need to get the carb numbers down if I want to lean out. The numbers:

Lead Us Not Into Temptation

I absolutely LOVE cheesecake, and I’d gladly much a piece under different circumstances; however, I’m determined to stay on track and make some real progress towards GETTING FIT!! No cheesecake for Dave.
Fitday For Monday

After a little pigging out this weekend, I decided to commit to a week (and hopefully longer) of logging everything I eat in Fitday. It’s just another tool to make sure I stay on track. So here’s what my totals looked like for today:

I had my normal egg and sausage breakfast but didn’t eat again until I got home a little after 3pm. I ate a small piece (about the size of the palm of my hand) of pork that my wife cooked yesterday–really delicious. Later I had a banana and small salad with cucumber, onion, and a little Caesar dressing. Then I flossed my teeth which marks the end of the eating day!
A Bucket For Lunch (I Ain’t Talkin’ KFC)

I didn’t feel like doing a third consecutive day at the gym so during lunch today I headed to the range to hit a small bucket of balls, and to do a little work on my short game. In retrospect, I probably should have stuck to chipping and putting because making those full swings put unneeded pressure on my sore foot. But it felt great to whack some!
I was hoping to start playing in a week or two but that will depend on my foot. You really don’t appreciate how important your feet are until they don’t work properly!!
Good day on the food side of things. I had my standard egg scramble for breakfast, and a big ass salad with a chicken breast for lunch. I ate some left over ground beef in tomato sauce with a little asparagus this evening.
I’m planning on hitting the gym tomorrow to do some lifting and another round of rowing.
Morning weight: 208lbs (damn thing is stuck!).
